We've just returned from 2 wonderful weeks in Ireland. We had some excellent meals while we were there. Not talking just pub food which was very good, but some truly outstanding restaurants. One Irish specialty which we had a few times (it's not seen everywhere) is boxty. Boxty is a potato pancake which is sort of a cross between a traditional American pancake, Swiss rosti potatoes, and Jewish potato latkes. A boxty measures about 10" in diameter, is foldable, is somewhat soft rather than very crispy, bit still has a bit of the crunch of shredded potatoes. They are typically served folded over and filled with lamb or beef stew, or a vegetarian stew such as ratatouille.
There are several recipes for boxty online but I'm hoping that some Irish CH will come up with a special recipe or hints for making this delicious Irish speciality.
