I'm cooking for a friend who is an omnivore, but doesn't eat fish or shellfish. He's a healthy eater and doesn't like real heavy food, but it's his birthday so I'd like to make something a little festive. I'm leaning towards vegetarian, but would also be up for making chicken or pork. The catch is that I'll only have about two and a half hours to cook, and no time in advance to prep. Any suggestions?
