One of the moms at our playgroup has a great daughter who is sadly allergic/sensitive to a lot of basic stuff: eggs, dairy and soy products. Daily, it's not too much of a problem, but the upcoming 2nd birthday has my friend stumped.
She'd like to have a birthday cake - her daughter is old enough to know the ritual around birthday stuff - but needs a recipe or tips. Egg substitutes don't bother her daughter, but she doesn't bake enough to know which recipes they can be used in with some surety of success (the box cautions that sometimes a recipe will work, and sometimes...it won't. Hmmmmm)
Anyone have a good egg-, dairy-, soy-free recipe for a cake? Or know what kind of cake recipes can use an egg-substitute successfully? Frosting ideas ?(besides dusting with powdered sugar, etc)
