I went to the store with some suggested cuts written down for a beef and barley soup. Most of what was on display did not match. I had some kind of center cut something written down so bought a "beef shank center cut" it has a marrow bone in the middle and is really think.
Not sure if I should use this for soup? Not sure how to use it?
I know people eat marrow but I think I'm a little grossed out by the idea of boiling it soup?
Buy something else? Or proceed and how?
