I want to make beef jerky like Czuchraj's

runwestierun | Jan 26, 201011:34 PM     5

I watched a Food Network show, The Best Thing I Ever Ate (Salty Goodness episode) ,and I was reminded of how good and different the beef jerky at J+J Czuchraj Meats in Cleveland Ohio is. I want to try to make some. In the episode they said they make it with beef brisket. It's very moist and and tender and delicious: decidedly unjerky-like. The thing I am most interested in is capturing the texture. I have a wood barrel smoker, a Weber kettle grill, and a propane BBQ. I've got hickory chips, applewood in seasoned logs, mesquite charcoal and gas. Anyone have any suggestions? Also, does it sound bad if I say I've got gas?
