Beans that are not sweet

I want to make some kind of beans today and I’m looking for a recipe that isn’t super sweet. Prefer something saucy with lots of flavour, but not overly spicy. I have all these neat dried beans - soldier beans, Jacobs cattle, pintos, Mexican pink, flageolets, black beans - would love to use them. I’m not new to cooking with beans but I guess I’m looking for something a little different. I don’t care how long it takes - I have nothing but time these days.
