I've always been of the opinion that good barbecue requires no or very little sauce. Many times the sauce masks the true, smoked flavor of the meat, in my opinion. Some bbq restaurant chains will often "feature" a variety of sauces [ex, Red's Backwoods BBQ and Sticky Fingers]as if that's why you're eating there, not for the barbecue. For that reason I avoid such places.(Of course, the fact that it's a chain rather than a one-of-a kind bbq joint is enough to keep me away.)
