Bar-B-Q -- Observation

In the restaurant world, food quality can vary significantly over the course of a day, especially bar-b-q (in my experience). Early lunches (like, 11am) at bar-b-q joints don't work, and I think it's because of the long cooking times. The meat is always removed before it's ready.

Any thoughts? Is later always better?
