I went out for dessert with friends, and shared a banana cream pie. It was a flaky crust with several layers of finely sliced bananas, followed by an inch of banana mousse,and topped with two inches of whipped cream and caramel sauce.
Aside from banana bread, I don't cook with bananas,and I've never really considered bananas a sophisticated dessert flavour. But the mousse in that pie was so delicate and flavourful that I want to recreate it. But rather than in a pie, I'd be interested in doing a baked meringue pie. Which makes me wonder; can mousse filled desserts be baked?
Any suggestions/recipes would be appreciated. I'm ripening a bunch in preparation!
