We were gifted with a whole box of bananas that went ripe .... actually soft ... at the same time.
I want to make banana bread. I'm in Guatemala and the markets near me carry neither baking soda or baking powder which is mentioned as the substitute if there is no baking soda.
What else can I substitute? Can I leave it out?
I have boxed pancake mix. Do you think I could throw some of that in there?
A bonus would be any banana ideas. HOWVER, this is quite the picky crowd ... no, seriously.
Don't even think ice cream because the freezer is lousy, the temperature rarely goes below 100 degrees and cream is practically unknown.
