I would be interested in a discussion of why Chicago has so few bakeries any more. Please tell me I'm wrong, but I can't think of a single one between North and Roosevelt, Wells and the lake except for Corner Bakery, which isn't what I'm talking about, and what's in the supermarkets. Out in the neighborhoods the old bakeries seem to be closing apace. One or two (Swedish, Dinkel's) are going strong but others are disappearing. I can't think of a European city that doesn't have bakeries both downtown and in residential neighborhoods. Is it a matter of high rents? Franchise power? Nobody buys Danish nowadays?
