My family likes chicken breast cut up and stir fried. Don't tell me to get thigh (which I prefer) bc they won't eat it. When I lived at sea level none of this was an issue. Now that I'm up in 5400' elevation, I can't seem to get it right. The cut up stir fry meat comes out tough and overcooked. Well, then answer should be easy. Just don't cook it so long. Well, it's not that easy. When I take it off the pan before it's fully cooked, it's raw. I've changed pans to my iron skillet. now it's burnt and raw in the middle. any suggestions?
