We are having a small-ish (less than 20) baby shower for a friend at my house in the near future. My mother and mom-to-be's sisters are helping. Shower starts at noon so we will need more substantial food. Here is what we have so far:
veggie and pasta salad (not mayo-based)
Maybe, but probably not:
mango shrimp salad in lettuce cups
pinwheel sandwiches (blah in my opinion)
quiches baked in cupcake pans
I feel like I should just scrap those last three items and do nice wrap sandwiches or some type of croissant sandwich. Chicken salad is totally overdone here and I am really hoping to do something different and tasty and appropriate for the summer. Any thoughts or ideas about what else I can add to this menu? Oh, mom-to-be said she is "eating everything except ground beef" so that makes things easy.
I am still thinking about the sweets as well. I'm thinking meringue cups filled with lemon curd and whipped cream, or maybe just small cookies or something like that. The others are insisting on a small candy bar for the favor so I am keeping dessert to a minimum.
