It is fall in New England and so I am naturally obsessing over apple varieties. Do you have a favorite? Why? And has anyone out there found Cox's Orange Pippins? I am obsessing over them--never had them, but all of my English cookbooks call it the best eating apple. So I'm really curiosu, and can't seem to find them!
I will recommend, by the way, Honeycrisp apples--hybrid out of University of Minnesota, I think, in the 60s?--very crisp, tart, juicy, with nice sweet undertone.
