I'm back at the apple pie thing. I have the vodka crust ready to roll (it seems really good) and am using America's Test kitchen apple pie recipe where you precook the apples. Have gone back to all granny smith's as mushy apples have been a problem.
Per suggestions, I'm going to boil the juices down, not throw them away, and put them in the pie. I'm going to use an egg wash on the bottom of the crust before I fill it. and bake it on a pizza stone.
Question. Can I assemble and let it sit in the refrigerator for a few hours?
I'm battling a new puppy, want the pie really fresh and need to assemble it whenever I get a chance.
