First time on this forum, and very much an amateur. My fiancé liked something called Amalfi chicken soup from Macaroni Grill--they haven't sold it in years. I've tried imitating it; she's said what I've done is good, but not quite the same. Here is my latest attempt:
about three boneless skinless chicken thighs
2/3 of a small red onion, chopped
3 cloves garlic, diced
1 large russet potato, cut into small pieces
1/2 tsp pepper
1/3 cup lemon juice
2 and 1/2 TB capers
1 bay leaf
1/2 tsp dried rosemary
10 oz cheese tortellini
8 cups low-sodium chicken broth
1. Saute chicken thighs in butter with salt and pepper until done, set aside
2. Saute onion for several minutes in juice/butter from chicken; add garlic and saute another minute
3. Simmer chicken broth, lemon juice, bay leaf, rosemary, potatoes, garlic, onions, capers in broth for 7 minutes. Add tortellini and simmer 7 more minutes. Chop chicken thighs, add, cook until heated through, and serve.
If anyone has any suggestions; particularly someone who has tried Macaroni Grill's version, I'd be very grateful. Thanks in advance.
