Afghan preserved SPICY potatoes

oh brother where art thou | Jun 3, 200204:00 AM

A couple years back, I went to a kebab house
and was served some searingly spicy (delicious)
potatoes that were somehow cured with chiles
and exotic spices. I returned to the restaurant
recently and they had subsituted hot sauce as
the condiment. When I asked the owner what was
up, he said they were losing money on the potatoes
because they did not keep for long. I wonder if
anybody has a recipe, I can always go back and
beg for it I guess. Not much salt or acid involved
so I guess you have to eat it pretty quick.
