Admittedly naive (and barely coherent) Grand Sichuan chicken question (but hey, it's got a picture)

Exactly what part of the chicken is used in dishes like the Gui Zhou Spicy Chicken (pictured below) and other chicken dishes at Grand Sichuan (just using GS as an example b/c this is my Chinese food establishment of choice)? It's sort of fatty and chewy and in different size pieces sometimes strung together by pieces of fat or skin.
