Adding a “kick” to Kunik

Five years ago in a thread here about Triple Cream cheeses, I mentioned Kunik, a delicious award-winning soft cheese that is soft blend of goat milk and cow cream by Nettle Meadow Farm in the Adirondacks. It is still on my “A”-list, but has now been joined by Amber Kunik, whose edible rind has been washed with a mix of local beer and whiskey to give it a nice amber color and a “kick” to the tastebuds. It has a shelf-life of 3-4 months. I don’t usually approve of unusual cheese additives, but this one is a winner. Both varieties are available in several sizes. As usual, the larger sizes are less expensive per pound.
Details about Amber Kunik have not yet made it to their website, but they hope to add it in a few weeks.
