AB's Avocado Buttercream Frosting - The Taming of the Kitchenaid...

As mentioned in my previous posts... my beloved is an Alton Brown nut. We recently watched the Avocado Good Eats Episode (Which I recommend to watch if only to see the HUGE test kitchen they have on set... WOW!!) and the final recipe was an Avocado Butter Cream Frosting. He pointed his finger on the screen and proclaimed... I want to try that...

My eyebrow instantly shot up...

But still... I agreed... with is birthday, St. Patrick's day coming up... I told him that I would add the Avocado frosting to the Carrot cake I was already making... and last night so began the big experiment.

I got two large buttery Organic Haas Avocados at the Farmers Market. Now, I usually get cheaper smaller Haas at the Mexican Supermarket (often 3 for a dollar), but for this, I wanted to spurge because the key taste WOULD be the Avocado... while I mainly use the cheaper ones for Guacamole... so I didn't want to take any chances of skunky avocados...

The rest of the recipe is pretty straight forward though. Lemon Juice, Powdered Sugar, Lemon Extract. But the process of making it would be a challenge for me because I was left all alone with my SO's professional Kitchenaid... EP!!!

I know.. I know... most cook would love to have this thing, but it absolutely SCARES me. I keep thinking parts will fly out, things will be beaten to death, I'll break it... I much perfer the control of a hand mixer...

Nevertheless, I took a big gulp and began putting together my icing. First, I needed to switch to the wisk attachment. I clicked it in and checked it like 15 times to make sure it would not fly off... Check...

Then I figured out how use the lever thingie... make sure I had it ALL the way up... Check...

Then I tested each speed. Listened carefull for any strain on the engine and sniffed the air for burning gears... no problem at all... Check...

And so I dumped in my Avocado Chunks and Lemon Juice and found that the wisk didn't really smooth out all the chunks... I kept on having to scrape down the bowl and actually ended up hand mashing several stubborn pieces.

Then I dumped in the powdered sugar. I didn't wanna mess with the little lip dumping thingie, So I just lightly spooned it in.. makeing sure not to hit the rapidly moving wisk.

I scraped down the bowl a few more times, add the lemon extract and VOILA!! Avocado Frosting!! It didn't take long, but with the scraping and hand smooshing and final result, It was a lot more work dealing with the kitchen aid than I thought it would be... next time I'll definatly use a hand mixer...

I tasted it just to see if it wasn't as funky as I feared... and it actually tasted just like Avocado Milkshake!! (One of my favorite things!!) Yum!! I wrapped it all and put in the frige hopeing that by the next morning (When I needed to frost the cake) it didn't turn brown (Like some Avocado Milkshakes do!)...

And so, one good nights sleep later... I went to check on my frosting and NO BROWN! YAY!!! The sugar and lemon must have all stablized it... so I frosted the cake and arrived to my SO's workplace where he had spent all morning telling everyone about the Avocado Frosting...

And it was a hit... even those that poked at it just to make sure the Avocado was dead... LOL! Although the frosting on it's own tasted just like Avocado Milkshake, with the cake, it kinda got lost (With carrots, spices, big sweet raisins and nuts, that carrot cake is RATHER busy). Most folks could not sense the Avocado in it... but they appricated it none the less for it's 'natural' coloring. And the carrot cake pairing worked well for holiday... It looked really irishy... With the Green and Orange. :)

As I mentioned, there will be a next time. I think the Avocado Frosting would REALLY shine ontop of a Lemon Cake... Perhaps with Zuchinni Muffins too... Hmmm... :)
