"San Francisco, CA/December 2018 – The 1881 at the Mansion on Sutter is open. The restaurant showcases seasonal contemporary California-French cuisine complemented by a world-class wine program, expertly crafted cocktails and extraordinary service. The restaurant’s kitchen is led by Chef John Goulette and the venue is owned by hospitality industry entrepreneur Bernard Rosenson.
Rosenson comments, “I have been associated with many enterprises over the years and none exceed the high standards that are in place at the 1881. The vision being realized here places the restaurant at the forefront of what is possible with respect to Bay Area fine dining.”
Highlights of the restaurant’s debut menu include Singaporean Wild Dungeness Crab with chili, ginger, peanuts, cilantro and fried mantou; Aged Wagyu Ribeye, 28-day aged, with bordelaise, garlic purée, roasted pearl onions, onion flower, smoked salt, espresso salt and jardinière; Lavender-Tea Risotto with local diver scallops, Manila clams, honey mussels, prawns and herb oil; Confit Berkshire Pork Belly with squash-filled cappelletti, pickled red kuri squash, and roasted pumpkin seeds and oil; House-Cured Wild Trout - Pacific steelhead trout and Idaho Snake River trout, pomegranates, Asian pears, charred quince, living cress, apple mustard purée, Iranian blue salt and mesquite smoke; and Pan Roasted Half Pheasant with black truffle purée, seared foie gras, cognac glaze and oyster mushrooms.
Chef Goulette is a native of Massachusetts and mentored by Ralph Conte in Rhode Island. He subsequently moved to New York City and worked for 3-star Michelin restaurants, New York Times award winners, and other Michelin starred chefs. Goulette joined the 1881 team, inspired by the opportunity to “follow the seasons, pushing myself to find the best locally sourced product and preparing food in a way that is both welcoming and memorable.”
Joining Goulette in the kitchen is Pastry Chef Allison Gill, a California native whose California Culinary Academy degree and diverse talents have enabled her undertake a myriad of hospitality industry responsibilities at notable San Francisco restaurants including Incanto, Perbacco, Slanted Door, Aqua, Zazie and Cortez.
The beverage list at the 1881 includes a thoughtfully curated international selection of wines, plus a variety of local craft beers. The bar’s cocktail menu, curated by Karina Kotovaya (Marlowe, Florio, Michael Mina Group) showcases classic, contemporary and signature libations. The wine list reflects an uncompromising, passionate devotion to quality with excellent breadth across multiple winegrowing regions and significant vertical depth of top producers, as well as esoteric wines from around the world.
Working to ensure the best possible customer experience at the 1881 is General Manager Pierre Dony who grew up in France with a passion for the culinary arts thanks to his father’s devotion to organic and healthy food. At age 23, he moved to Orlando, Florida to work for Jerome Bocuse at his iconic restaurants at Epcot (Disney), Chef de France and Monsieur Paul. After a subsequent stint as the General Manager and Wine Director of two Texas restaurants and wine bars, Dony became the General Manager and Sommelier of the historic Sky Room fine-dining restaurant and Cielo rooftop bar in Los Angeles.
The decor of the 1881 is by Timothy Quillen of San Francisco. Attention was paid to the integrity of the building as a historic site: wall, ceiling and floor finishes include historic materials and colors, Victorian and Art Nouveau accessories and furniture, and an extensive collection of 19th and early 20th century art. The dining room seats 90 people, with a bar and an outdoor patio.
The 1881 Restaurant is located at 1409 Sutter Street, near Franklin Street, in San Francisco and is open nightly from 5:30 to 10:00 p.m. with weekend brunch service and high tea beginning in January 2019.
