It's the time of year when we hunter - gatherers make sausage. I always make mine at home (a tolerant wife and a few friends make it pretty easy) but I'm looking for some new ideas. This year we have venison, nilgai antelope, russian boar and assorted game birds.
We usually make hot italian, sweet italian, garlic and black pepper, jalapeno, summer sausage and one with game birds (meat, brandy soaked currants, black pepper, light mustard seed, easy on the garlic).
Any other ideas/recipies would be most welcome.
