How/from what do salmon get their coloring?

There's a discussion on the GT board about ivory salmon. One poster said that the pinkish hue we associate with salmon comes from their eating shellfish while at sea. I had never ever heard that before - do salmon eat shellfish? They don't seem to have the jaw structure for it a la damselfish (coral eaters) and, I think of shellfish (other than shrimp) as bottom dwellers, and salmon as inhabiting a different zone. Anyway, now that my curiosity has been piqued I have to know, where do they get their color? Is an ivory salmon an albino of its species, a vegan salmon? Has anyone out here in salmon mecca had ivory salmon? Let's hear it!
