Portobello mushrooms may be the meatiest of mushrooms, the vegetarian's natural meat-like option. Remove the stems and slice your portobellos thin before you sear them. Plus, you get to use three kinds of peppers in this dish: smoky poblanos, light, sweet bell peppers, and spicy jalapeno. The sauteed peppers and onions are spiced with salt, cumin, and garlic powder. The avocados add a rich, creaminess you need in guacamole form, flavored with just the juice of a lime half and salt. The roasted tomato salsa, if you choose to make it, really rounds out the fajitas.
