This is a refreshing Easter picnic salad honoring spring's asparagus season with 2 pounds of the stalks comprising the bulk of the dish. The thinly shaved P'tit Basque cheese is 100 percent pasturized sheep's milk cheese from the Basque region of France, in the Pyrenees mountains that border between France and Spain. The semi-soft cheese ages at least 70 days, forming a basket-weave pattern similar to Manchego cheese. But P'tit Basque is milder and more delicate tasting. It's smooth, sweet, and nutty. If you can't find it, use Manchego. Thinly sliced sweet onions, garbanzo beans, fresh torn mint leaves, and a simple lemon-oil dressing round out the recipe.
