Bean and Cheese Breakfast Taco
For one taco you’ll need a corn tortilla, 1/3 cup refried beans (black or pinto), a small handful of grated cheese, a large egg, salt, a spoonful of Greek yogurt, and hot sauce. Set a small nonstick skillet over medium heat, add a little oil, and fry the egg until the white is set. Season with salt and remove to a warm plate. Add the beans to the same skillet and stir until hot, then add the grated cheese and let it melt. Heat your tortilla (we do it directly over a gas flame till it’s puffed and a little blistered), lay the egg on top, spoon on the beans and melted cheese, and add the spoonful of yogurt. Sprinkle with hot sauce and enjoy!
