Nab has figured out why the salads at Bangkok Blue are so wonderful: “I was told there is a ‘salad lady’ who is only in on certain days, so I always ask if she’s there before I order. She takes the flavours to the extreme edge, while maintaining an essential balance.” A salad of spicy fried catfish flakes with green papaya, yum pla dook foo was a thrillingly spicy example: “I wear a towel on my head while I eat this,” said Nab.

Nab’s not sure about the salad lady’s schedule, but thinks she’s off Sunday and Monday.
