Iraqi amber rice, known as ambe mohar, is almost impossible to find outside of Iraq. It’s highly prized and rarely exported, explains MMRuth, although she was lucky enough to receive some as a gift. “It is very aromatic, and similar to traditional Basmati, with a slightly golden color,” she says. Her husband, who is a rice trader, says that a few containers make their way to Jordan, Dubai, and Egypt (all places with large Iraqi populations) but amber rice is not part of the regular rice trade, and it isn’t likely to be available online. If you find some, let us know.
