oonth has been enjoying fresh jumbo papayas imported from Brazil, finding them in ethnic markets around London. The immense flavor and sweetness—normally not associated with papaya—is followed by a counterbalancing burnt nuttiness. The flavor alone is wonderful, but you can squeeze a few drops of lime juice or drizzle some bottled yuzu over a few chunks of papaya to add another complementary dimension. “The mango may be the king of fruits but the papaya is very definitely a member of the royal family,” says oonth.
