Nanaimo bars, no-bake bar cookies named for the Canadian city, are British Columbia’s signature dessert. Hounds approve of the traditional recipe, composed of three layers: a graham-cracker-crumb base flavored with cocoa powder, coconut, and almonds; a filling of buttercream flavored with Bird’s custard powder; and a dark chocolate topping. Though Nanaimo native tastesgoodwhatisit insists that the creamy middle layer should not be “mint or coffee or peanut butter flavored (or any other novelty flavor),” non-Canadian rasputina says she loves this peanut butter version.
