Tarragon and Red Wine Chicken Stew

This is a quick and easy recipe that takes only about 15 minutes to prepare and 45 minutes to cook. Just set it up and walk away! Go walk your dog, run an errand, read a book, or enjoy a nice glass of wine. Want to switch it up? Try using beef, lamb or foul instead of poultry. No matter the occasion, it is sure to impress!

Instructions

  1. 1Clean and prep chicken and vegetables—cut chicken and potatoes into decent sized chunks, finely dice onion, dice celery and carrots.
  2. 2Cover bottom of medium pot with 2 tbsp olive oil or enough to cover bottom of pan.
  3. 3Add chicken and vegetables to pot; add red wine and chicken broth. Mix everything around to make sure things get even coating of wine, broth and oil. Turn pot on high to medium-high.
  4. 4Add spices to taste; easy on the tarragon (a little goes a long way!), focus on the pepper.
  5. 5Leave pot on high to medium-high, cover, and cook for up to 35 minutes; stir occasionally.
  6. 6Dissolve cornstarch (or flour) in cold water, add to pot and stir until evenly distributed. Add more spices and let stew for another 10 minutes on high to medium-high.
  7. 7Remove from heat and let sit for up to 10 minutes to cool. Serve with fresh or toasted. Enjoy!
