Zucchini Rollups Question

I'm in need of a quick appetizer for tomorrow evening. Bought some really nice zucchini that would be perfect size for zucchini ribbons, so I may try concocting rollups. Having never made these, I'm not sure which direction to go- grilled slices, versus raw ribbons, and whether or not to use a ricotta based filling or one made with goat cheese. Has anyone made these, and if so, can you point me to a tried and true recipe?
