After the holidays, I always have a ton of ingredients left over from various recipes I made or thought I might make and I have to come up with ways to use them before they go bad.
Today, for example, I found 2 nearly full containers of plain, low fat yogurt that supposedly expired at the end of December. As they still seemed useable (although somewhat separated), I am making meyer lemon frozen yogurt. As an added bonus, I tossed in the last splash of lemoncello gifted by a generous neighbour. Although not in danger of spoiling, there was only a splash left and it would have sat in the back of the fridge forever. Now it will add flavour and help keep my yogurt from freezing solid.
Anyone else making anything interesting with their leftover holiday ingredients? Bonus points if you can turn rich, decadent holiday ingredients into something light and refreshing (which so many people seem to crave after the holidays).
