I'm-as I type this- on my second attempt of making bread. I just sat the dough down to rise after it failed several of these "window pane test" after I've read about . I kneaded for about 20 instead of 10 minutes in total trying to get it right but it still failed.
My kneading technique consisted of the palm push+fold+rotate combination. The dough wasn't at all sticky like the first attempt. I used bread flour this time minus one cup to substitute for the cup of whole wheat I added(I also added a small amount of extra water to compensate). The dough felt like it was going to turn out great until the first 9 minutes where up and I tested it.
What did I do wrong?
