I only own copper cookware from Mauviel M250c (2 sauter pans and a Rondeau) and from Falk 2.5 Signature (4 conical saucepans and soon 3 frying pans).
I really enjoy the performance and the feel. I think I might even prefer my Falk a tiny bit over my Mauviel to be honest.
Falk seem to think more design where Mauviel is more old tradition.
I cook on gas.
What is your preferred copper cookware brands?
In what way do you feel the advantage in your daily cooking as compared to non copper cookware?
Is it only the faster response time, that does it for you or perhaps the overall heft and feel from using copper?
