I'm a Bay Area hound/working chef in search of a classic (or perhaps "typical") menu for a dinner representative of Virginia. I lived on Cheasapeake for a summer and want to build on my memory of blue crab and Virginia ham. I'm not looking for recipes, just some solid directions in which to explore. This is going to be an upscale buffet if that steers your input. The party starts with California appetizers and winds up with a formal Virginia buffet. It's for a couple moving to VA.
