New (to me) vinegars

No, I'm not obsessed with vinegar. No, really. I don't dream about them (usually), I don't save the labels (Hey! There's an idea!), I don't spend hours looking for different ones. (At least daily.) ;-)

1) OK -- I have some umeboshi vinegar. (Apparently it's not a "real" vinegar but rather a side product of making umeboshi plums. But I digress.) It's very strong. I don't think I'll use it for sushi unless any of you give me some ideas in that direction or inspiration strikes. So far all I've used it for is some quick pickles.

2) I just saw some purple sweet potato vinegar. Really. Purple sweet potato vinegar. I'll probably get it as soon as I figure out what else to buy to save the shipping charges. Anyone here familiar with it? Ideas?

3) My favorite itamae was talking about black vinegar -- apparently used just to drink a little as a digestive aid. Comments?
