What vegetable side dishes taste best served in the same meal, and with what? Few recipes go beyond suggesting one vegetable side dish or salad, but as a family that now follows the half-your-plate-should-be-cooked-vegetables law (excluding starches like potatoes, peas, corn), I need to come up with two and sometimes a salad, besides.
Some of our faves:
With black beans & rice: carrots in sour cream/cilantro sauce; sauteed cabbage.
With chicken in mustard sauce: steamed cauliflower; matchstick-cut zucchini & yellow squash sauteed in garlic and oil.
With lamb: sweated leeks; asparagus; salad w/blue cheese.
With garlicky, oregano-ey chicken: garlicky green beans; steamed broccoli, greek salad.
