Variations on Tabouli (or tabbouleh)...

I love this dish... especially in the summer. Mine is pretty traditional except for a little finely chopped persian cucumber along with green onions, tomatoes and lots of parsley and some mint (either fresh or dried). I add a bit of sumac along with the lemon juice and evoo.
Would be interested in variations, either with other vegetables, herbs, or with different grains. Thanks.
