What Unusual or Uncommon Vegetables Do You Eat - And how do you prepare them?

On a recent trip to Taiwan I had a delicious dish of garlic stir fried Yelian (water lily) and Cordia (Indian Cherries). Had never eaten either before, but was blown away by how good this combo was. Each ingredient was delicious as was the dish on whole! Wish I had taken a pic, but dish looked similar to this, but with cordia instead of peanuts. The Ye Lian (sp?) had a texture similar to green beans with taste a cross between fresh chive and asparagus. The chordia tasted like olives only less briney with just a hint of sweetness.

As for me I love fresh (not canned) grilled Nopales mixed with sauteed peppers and scrambled eggs. Wonderful in a breakfast burrito.
