Do to an unexpected event, I had to rush out of the house Thursday and I had just put a turkey breast in a preheated oven. It was in the oven for about four minutes. The very top of the breast was warm when I took it out of the oven but the under layer was still cold. I still had the cold brine so, I tossed it back in the brine and in the fridge and left. Got back home a few hours later and poured off the brine. Would you toss it, or roast it, cut the top layer off and roast?
