i used a teflon pan, didn't have the heat up quite high enough (like i said, first time ever pan searing anything!) and didn't use any oil in the pan (that should have been obvious, but i was really gung ho to eat this...)
the sauce was awesome...1/3 stick butter, zest of one orange, one tiny carton whipping cream, let simmer (stirring occassionally) till thick. i put some zest on teh plate, arranged the tuna, orange slices, and snow peas, drizzled sauce over the fish (so beautifully rare) sprinkled mint onto the sauce. when the fish was gone i dragged the orange slices through the sauce. THat would make an awesome dessert. mixed fruit in a puddle of that stuff.
Next time, scallops, dry pack. what fruit combo should i use???
