I'm currently reading a book about Civil War in Texas titled Galveston, by P.G. Nagle set in 1860's. The Union soldeirs just went to a restaurant in controled NO that "serves a good table d'hote" served by Monsieur Tujaque. The dining experience was detailed and very interesting. If it's accurate, not much has changed since then. Pretty cool.
When was Tujague's established?
