Many thanks for the suggestions from everyone. Having returned from my trip, I thought I'd pass along our experience with Connaught Place Restaurant, an Indian restaurant which is in the back of a strip mall in Tsawwassen (near the Safeway).
The restaurant itself wasn't impressive, but they have clearly tried to make something nice out of a 'strip mall space'. The food was quite good and fresh, comparable to Indica (Pendrell, off Denman in Vancouver), although not Vij's (Vancouver) quality. I'm not into super spicy, so I can't really comment on that. I had the saag and an appetizer of pakora, and the mint sauce was very good.
I must admit that my expectations were not high (back of a strip mall?), but all in all, it was a good experience, and I'll definitely go back when I'm in the neighborhood, although I wouldn't make a special trip.
