The Happy Sushi To Go lunch truck on Bush near Montgomery is now serving "Okinawa soba" for $2.75. I love this truck for so many reasons. The owners, a couple from Okinawa, are super nice, first of all. Also, they have recreated a real sushi kitchen -- highest cleanliness standards -- as well as possible within a truck. (I saw the inside and it's immaculate.) The sushi is the best take-out I've ever had. (They have some stuff refrigerated, but he'll make stuff to order if you ask.) They said they started doing the Okinawa soba because they wanted to offer a new-and-different alternative to miso soup, which everyone knows. The soup is small and simple but very hearty and satisfying -- thick flour/egg noodles in a dashi(dired fish)-based broth.
