I have an interesting idea of incorporating Bacon into a Tri-Tip somehow, similiar to how a Filet Mignon is cooked with Bacon. Not sure if this has been done, if so, I'd like some ideas on how to accomplish this. Some ideas:
Slice lengthwise (I know this might not be so great as the juice from the meat would come out) the Tri-Tip then insert strips of bacon then using some cooking string, tie up the Tip and grill as usual. Maybe even sear the Tri-Tip to seal in the juice frist.
The other idea is to wrap the Tri-Tip like a Filet Mignon, but I'm afraid the grilling will char or burn the bacon after too long.
Anyhow, looking for suggestions!
