Made some super fab beans that I'd like to share.
I had leftover rajas con crema -- roasted poblano peppers cut into strips and simmered with mexican crema and white onion
(you can use sour cream, but it separates)
So I threw a bunch of roughly chopped cloves of garlic in olive oil...about 1T tomato paste...mashed and cooked that up for a couple minutes...added a large can of Goya pink beans (habichuelas)
Then added several T of the little roasted poblano strips and simmered a little longer. Mashed up some of the beans, but plenty remained whole for a nice texture with the pepper strips. Pinch of salt to taste, and chopped up fresh cilantro makes it even better.
so simple, so yum
other quickie dish is fried onions and potatoes with chopped up chorizo. You only need a little bit of the sausage to get a nice flavor going. I put the chorizo (fresh or dried, whatever I get my hands on) in with the onions so the fat is released. I like chopped up fresh flat leaf parsley with this.
