i want to bake lace cookies and need a good recipe. i am seeking one that will work well with a melted chocolate filling.
i want them fairly buttery and little chewy, but overall they should be more crisp than chewy. i was impressed by the gargantuan ones at JON VIE pastries in the village (in nyc) although those were considerably too chewy and a little too thick to be perfect. also, although they are tasty in a butterscotch or caramel-meets-chocolate way, their cookie is just too big and the filling is spread so thickly, it's a little to much like eating a slab of chocolate than a cookie.
still, i found them very inspirational. i especially like the way they make them with pignoli nuts. i would like to do pignoli nuts in mine. would it be best to incorporate the nuts into the batter, or to sprinkle them on top? with the one i had at JON VIE last week, the pignolis seemed to have been sprinkled on top. whaddaya think?
