Thomas Keller's favorite roast chicken question

I've made this many times and it's excellent! He calls for a 2-3 pound bird however, and I have a 6-7 pound one I would like to cook today. Do you think I can still use his method of high heat? Or do you think with a larger bird, I wont get the same results? Thanks!
