Thanksgiving hors d'oeuvres with (or without) prosciutto?

My assignment for Thanksgiving dinner is finger food. I just bought a large quantity of domestic prosciutto (saltier and less delicate than Parma). Any ideas for simple, wonderful appetizers, with or without the prosciutto? Nothing too rich, in anticipation of the gluttony to come.
